Sambal Tomat (Tomato Sambal Sauce)
INGREDIENTS:
5 Shallots, cut into 2 to 3 pieces
4-6 medium-length red and green chiles, sliced
2 tomatoes, chopped
1 Tablespoon fresh lime juice
Salt to taste
Small handful of lemon basil
INSTRUCTIONS:
Toss everything together and serve with grilled fish.
Menadonese Ikan / Menadonese Grilled Fish
Grind the shallots, chilies and a thick slice of peeled fresh ginger root to a paste. Fry the paste in an oiled wok until fragrant. Add the tomatoes and stir-fry until soft. Stir in lime juice and salt and spoon over grilled fish
Menadonese Ayam / Menadonese Grilled Chicken
Make the same cooked sauce provided for Menadonese Grilled Fish, but using 1 teaspoon of shrimp paste instead of ginger root, and pour over charcoal-grilled chicken.
